Oolong tea can be recognized by the colour of the roasted leaf – its darker edges, which have been fermented, resemble the leaf of black tea, the remaining, much brighter part of the leaf looks like a leaf of green tea.
Oolong (烏龍) is a genus of semi-fermented tea natively originating in China. Part of the production takes place in the north and northeast parts of Taiwan.
Ulungi from India, Nepal, Vietnam and other countries are also known. It is called blue tea, turquoise or emerald tea.
Ulung is characterized by a high content of tannin and catechin and a small amount of caffeine.
Oolong tea is valued for many properties.
The most important value of oolong tea is the presence of antioxidants: catechine, teaflavin and tearubigin.
